Salmon in Sweet Syrup I got this recipe from my friend Chris. Chop an onion. (I like to slice finely in one direction and coarsely in the others, to get long, thin arcs for this recipe.) Mix 3/4 cup white vinegar (other vinegars can substitute if you think they'll go well with salmon) with 3/4 cup sugar. Stir until the sugar is dissolved (assuming that it will all dissolve), then add the mixture and the onion to a deep skillet. Bring it to a boil and let it simmer, stirring occasionally, until the mixture is reduced to a syrup and the onion is caramelized. Add half a can of cream of coconut, and stir well. Fry some salmon fillets in another skillet until they're almost done, then transfer them to the syrup and let them finish cooking there (with some syrup spooned on top of them). While they cook, you could start frying more salmon, transferring it to the syrup after you serve the first batch. Make sure everyone gets some syrup and onion on top of their salmon.
