Broccoflower & Yams 1 broccoflower (or cauliflower or broccoli) 1 large yam 1 T EVOO 1 t sea salt 1 t Kosher salt 2 t cumin seeds a few grinds of black pepper Wash broccoflower, scrub yam. Preheat oven to 350 degrees F. Remove leaves and large pieces of stem from broccoflower, chop into bite-sized pieces. Top & tail the yam. Chop into bite-sized pieces. Combine chopped veggies in 9 x 13 glass pan. Spritz with water. Grind cumin seeds with Kosher salt. Add sea salt, cumin salt, and pepper to veggies. Toss to combine. Drizzle with olive oil, toss again until lightly coated. Cover pan tightly with foil, bake for about 40 minutes. Remove foil and bake for 20 more minutes to dry out and crisp up a bit.
